Maureen's mac and cheese

Ingredients

    8 oz. Ronzoni Smart Taste elbow macaroni
    8 oz Reduced Fat shredded cheddar
    1 can fat free evaporated milk (12 oz)
    1 cup skim milk
    2 T light butter
    2 T flour
    1/2 cup chopped onion
    3/4 cup frozen spinach defrosted

Directions

Preheat oven to 400. Cook pasta for 8 minutes. In medium suacepan, saute onion in light butter. Add flour and mix well, then add the milk. Whisk well and let come to a boil. Simmer this until it starts to thicken. Remove from heat and stir in 1/2 of the cheese. Mix with pasta. Grease baking dish with cooking spray. Spread half the pasta mixture into dish. Spread half the spinach on top and then add half the remaining cheese. Repeat layer and then bake at 400 for 45 minutes or until golden brown and bubbly. Let sit 10 minutes before serving.
