Vegetable Soup (8-oz cup = 1.5 veggies)

Introduction

Just happened to pretty much clean out some items in my freezer and refrigerator to make soup. Just happened to pretty much clean out some items in my freezer and refrigerator to make soup.
Number of Servings: 16

Ingredients

    1 T olive oil
    200 gr (1.5 cups) onions, chopped
    260 gr (2 cups) carrots, chopped
    100 gr (1/2 cup celery, 1/2 cup celery leaves), chopped
    300 gr (2.5 cups) red pepper, chopped
    450 gr(3 cups) tomatoes, diced
    400 gr (3 cups) sweet potatoes, chopped
    230 gr (1.5 cups) winter squash
    4 cloves garlic
    3 chicken or veggie bullion cubes
    1 tsp salt
    1 tsp crushed black pepper
    .5 tsp garlic powder (optional)
    .5 tsp onion powder (optional)
    2 tsp sriracha sauce
    1 T brown sugar
    ~10 cups water (or home made broth, fat and sodium free) to make 16 cups of soup

Directions

In heated oil, saute onions, carrots, celery, and red pepper. About 10 minutes. Add tomatoes. Cook additional 10 minutes. Keep as is or put through processor. Set aside.

In 2 cups water, cook sweet potatoes and squash. Simmer about 10-15 minutes. Mash or process if desired.

Add sauted veggie mixture, garli powder, onion powder, salt, pepper, brown sugar and 8-10 cups of no fat, no sodium broth. Enough broth or water to make 4 qts (16 cups) of soup. Before serving, add 2 tsp sri racha sauce.
