Braised Fennel with Onions and Balsamic Vinegar

Ingredients

Olive Oil, 3 tbsp
Pearl Onions, 8 oz
anise fennel, 2.25 lbs
Garlic, 3 clove
Vegetable Broth, 1 cup
Salt, .5 tsp
Black Pepper 1/4 tsp
Bay leaves 2
Oregano 1 tbsp
Balsamic Vinegar, 2 tbsp
Tips
Directions
In a large, deep skillet, heat oil over medium heat. Add onions and cook, stirring, until browned. About 5 minutes.
Add fennel and garlic; cook , stirring occasionally until fennel begins to soften
Add brothe, bay leaves, salt and pepper. Bring to a simmer. Reduce heat to medium-low, cover and cook for 10 minutes.
Uncover, increase heat to high, and cook until all liquid evaporates. Add vinegar and oregano and cook for 3 minutes more.
