Introduction

Number of Servings: 4

Ingredients

    1 whole sweet Maya onion, sliced thin
    1 Anaheim chili, cored and seeded, diced
    8 oz rib eye steak, fat trimmed
    3 medium zucchini, diced
    1 bunch spinach, washed and stemmed
    2 cups fat free chicken broth
    2 tbsp OlivExtra (canola/olive oil blend)

Tips

Add 1/8 cup "general curry spice" or your favorite curry spice mix when adding chilis.


Directions

In a large pot such as a dutch oven over high heat, add 2 tbsp oil and saute onions until softened, 2 minutes. Add diced chilis, cook 1 minute more. Add beef. saute until all vegs are wilted and beef is browned on all sides. Add broth and bring to a boil. Add zucchini and cover, cooking until almost done. Add spinach during last 5 minutes. Cook until wilted.

Serving Size: makes 8 1/2 cup servings, 2 oz beef per serving
