Warm Black Bean Salad

Ingredients

    Bush's, Black Beans, 1.75 cup (remove)
    Onions, raw, .5 cup, chopped (remove)
    *Summer Squash, 1 cup, sliced (remove)
    Yellow Peppers (bell peppers), .5 pepper, large (3-3/4" long, 3" dia) (remove)
    Spinach, fresh, 3 cup (remove)
    Mushrooms, fresh, 2 cup, pieces or slices (remove)
    Sun Dried Tomatoes, .5 cup (remove)
    Basil, 8 tbsp (remove)
    Olive Oil, 3 tbsp (remove)


Directions

Pre-chop all vegetables.

Saute onion and garlic for five minutes, until translucent. Add all other vegetables EXCEPT spinach and basil. Simmer for 5 minutes.

Add Spinach and hand-torn basil. Fold over so warm vegetables coat the spinach to help it cook down.

Open can of black beans, rinse, add to pan. Remove from heat, cover, let stand five minutes. salt to taste.
