Introduction

Number of Servings: 6

Ingredients

    2 c. dried northern white beans
    2 c. diced onions
    2 T. olive oil
    4 c. organic vegetable stock
    1/2 c. Organic ketchup
    2 T. dry mustard
    2 T. molasses
    1/4 c. maple syrup
    2 t. liquid smoke
    salt and pepper to taste

Directions

- Soak beans overnight or 6-8 hours; drain
- In 6 qt pressure cooker, sautee onions in oil until golden brown, caramelized
- Deglaze pan with vegetable stock and add beans and seasonings, omitting salt
- Bring cooker to pressure and cook ~30 minutes on low simmer (fine steam mist releasing during cooking)
- Release pressure and check beans. Add salt and cook and additional 20-30 minutes. Check and cook additionally as needed.
