Apple and Sausage stuffed Winter Squash

Ingredients

    1 large acorn or medium delicata squash, halved
    4 turkey breakfast sausages, sliced
    1/4 chopped walnuts
    3 T sugar free maple syrup
    1 medium sized firm apple chopped
    1/2 C onion chopped
    2 T smart balance spread
    1/2 tsp thyme
    1/2 tsp sage
    salt and pepper to taste

Directions

Cut squash in half and remove seeds. Place upside down in a microwave dish with C water and cook on high for 5 minutes.
Cut sausage into small pieces. Cook sausage within onion in the butter until sausage is no longer pink. Core apple and cut into small chunks. Add apples, sage, thyme, walnuts and maple syrup to the sausage and onion. Cook on medium heat for a few minutes to blend ingredients.
Spray the bottom of a baking dish with oil. Place the two halves of the squash in the baking dish (right side up). Fill the cavities with the apple/sausage mix.
Heat oven to 375 degrees. Cook for 30 minutes.
Serves 2 as a main dish or 4 as a side dish.
Amount of ingredients can be adjusted to taste and according to the size of the squash you are using.
