1 lb (about 5) boneless skinless Chicken Thighs
2 cups organic Zucchini, sliced
1/2 large yellow organic onions, raw, 1/2 large
1/3 cup Mushrooms, Cremini,(about 4) chopped
2 Golden delicious apple medium, 2 - chopped
1 large fresh ripe Tomatoes - chopped
3 stalks organic celery - chopped
Organic Extra Virgin Olive Oil, 1 tbsp
Safflower oil - organic, 2 tbsp (or use all olive oil)
Herb garlic blend, about 1+ tsp. to taste

Meanwhile, slice mushroom, dice onion, and chop other vegetables in about 1/2 - 3/4 (bite size) pieces.
When chicken is browned, add vegetables (except tomato) and olive oil to pan; saute' & gently stir until wilted and slightly colored. Add broth and tomato & seasoning; stir; cover pan & reduce heat to med. low (definitely hotter than just simmer/ keep warm) and cook until vegetables are of desired tenderness and chicken is done.
Serving Size: 5 servings = one thigh and nearly one cup of veggies
