Beef Gnocchi Soup

Introduction

A wonderful filling soup made in the crock pot. A wonderful filling soup made in the crock pot.
Number of Servings: 8

Ingredients

    1.5 lbs lean beef roast
    2 cups sliced zucchini
    1 cup sliced baby portabello mushrooms
    1 cup coarsely chopped onion
    2 cups sliced carrots
    1 cup chopped potatoes
    half of a pack of low sodium taco seasoning
    1 can cream of mushroom soup, condensed, low fat
    3 soup cans of water
    salt and pepper to taste
    1 cup baby spinach leaves
    potato gnocchi, 1 box (Delallo Potato Gnocchi)

Directions

Layer 1st 6 ingredients in crockpot, sprinkle taco seasoning on top, then spoon condensed

soup over all. Add 3 cans of water. Cover and cook on high 4 to 5 hours. Add spinach

leaves, cook 30 minutes more. Add gnocchi, cook about 30 minutes more, then season to

taste. I serve mine with french bread to dip. Serves 8.
