IntroductionMy modification from the Tofurkey Vegetarian Roast package. My modification from the Tofurkey Vegetarian Roast package.
Tofurkey Vegetarian Roast, Small, Thawed
2 large red Potatoes, scrubbed and quartered
2 large Carrots, scrubbed, halved and cut in 2" pieces
2 medium stalks Celery, cut in 2 " pieces
1 medium Onions, quartered
1 tbsp Soy sauce (tamari)
3 tbsp Olive Oil
1 tsp rubbed Sage
Make the baste with the tamari, olive oil and sage.
Put roast in a casserole dish, arrange veggies around the roast. Baste with half the basting sauce. Cover tightly with foil.
Bake 1 hour. Uncover baste with remaining sauce and continue baking uncovered 30 minutes.
Let rest 15 minutes before serving.
