Turkey Chili

Introduction

A low calorie delicious chili. A low calorie delicious chili.
Number of Servings: 10

Ingredients

    10 oz. ground turkey, 93% lean
    2 cups sliced zucchini
    2 cups sliced yellow squash
    3-15 oz. cans tomatoes
    2 celery stalks
    2-8 oz. cans beef broth
    1 can black beans
    1 onion

Directions

Chop all ingredients into same size dices.
Saute' onion and turkey.
Add rest of veggies and broth.
Simmer for 30 minutes.
Add black beans and cook for 10 more minutes.

    I added 3 minced garlic cloves 1 chopped carrot, cracked black pepper, and red pepper flakes...not exactly "chili", but very good, none-the-less! - 9/7/08

    Looking at the ingredients, a serving is probably right around 1 cup. Not more than 1 1/4 cup.
    Substitution for black beans - any other canned bean - pinto, kidney, northern - will pretty much maintain the nutritional information. - 9/7/08

    you cant have chili with No chili powder or spices for that matter. Perhaps it should be called "turkey and vegetable stew". Everyone that rated this recipe "good or above" has added spices and other things to get that rating.The rating is forTHIS recipe, Not for how when its doctored or modified - 8/9/10

    Leave out 1 can of beef broth and replace one can of tomatoes with one can of Rotel tomatoes with green chiles. I like the squash in chunks, not sliced, but that's just my preference. Overall a good lean meat dish - 6/3/09

    Will try this using fresh tomatoes and Beans I cook myself instead of canned. Also low sodium broth. Will also add some peppers and chili powder. - 8/9/10

    I love this chili and my kids don't even know all the veggies that are in there. I buy frozen zucchini and food process it while frozen. It adds chunkiness, but they never know what's in there. I also use Rotel tomatoes to zip it up a little. I even served this at my super bowl party! - 1/22/10

    I loved this chili! The added squash almost made me think soup, but it was still great! Added a dash of chili powder and used the 'flavored' diced tomatoes (garlic, onion, etc) for a little more oomph. - 8/15/09

    The second time I've made this chili--added two serranos to the jalepenos and STILL had to add some srirachi sauce for heat. Have to figure out a lower-sodium way to do it, though. Just as tasty as the last time. - 7/12/10

  • I made this today and enjoyed it very much. I didn't have beef broth so I used chicken, and only two cans of Italian stewed tomatoes. I added more of each veggie (except onion) and added sweet paprika and chili powder. It has a good mouth feel and was satisfying. - 11/7/10

  • GREAT USE OF MY DEHYDRATED SUMMER SQUASH, but I will also add dried Jalepenos or other chili peppers - it's not chili without them! Rotel with green chilis would do it, too. I also cook my own beans, overnite in slow cooker - cheaper & lower sodium. may use dehydrated tomatos, too. - 11/7/10

    My Weight Watcher's Chili recipe is very similar and is 1 point per cup. Add one bell pepper and 1 package chili seasoning mix. You can also leave out the turkey. It's a big hit with my family. - 11/7/10

    Will try this soon. Cumin, crushed red pepper, and paprika will add some smoky goodness. Also, great idea to process the veggies. I know squash and zucchini are good for me but I just can't stand the texture of them :s - 8/18/10

    Whatever happened to making food from scratch? The canned tomatoes I can allow, but canned beans have so much sodium! I haven't made the recipe yet, don't have squash on hand, but once my garden delivers I'll try it.
