Ingredients

    6 rashers pancetta
    1 medium head cauliflower
    350g macaroni
    150g low fat mature cheddar
    1 cup white breadcrumbs
    few sprigs fresh rosemary
    2 cloves garlic
    200g low fat crème fraiche
    Parmesan to serve

    2 heads of chicory
    small bunch fresh basil
    1 clove garlic
    10g anchovies
    1 tsp dijon mustard
    1.5 tbsp low fat natural yoghurt
    2 tbsp red wine vinegar
    small handful capers

    1 tbsp oil,
    salt
    pepper
