1 medium banana, mashed
2/3 cup liquid egg whites

Directions
Mash banana with fork and mix in a bowl with the egg whites. You can add a packet of sweetener now if your banana was not very ripe.
Preheat a medium-sized (not large!) skillet to medium heat and spray with nonstick spray. Once hot, pour 1/2 of the batter onto the pan and let cook for approx 2 minutes, or until solid and puffy enough to flip. Cook other side for about 1-1 1/2 minutes, or until done to your liking. Repeat with second pancake.
**be careful--if you flip too soon, it will look NOTHING like a pancake! (but it will still taste delicious!)
