Introduction

Many more veggies than meat, so gives a nice one-dish salad treat. Fresh raw veggies (and one apple) do increase the total carb:protein ratio, so if desiring a 'tighter' Paleo regimen, might want to add more chicken to increase protein/ serving. Ingredients

    1 lb. Chicken Thighs (about 5 thigh) boneless & skinless
    5 stalks of Celery, raw, medium (7-1/2" - 8" long)
    1/4 large sweet Onions, raw
    8 (or about) Baby Carrots
    1 medium sized Golden Delicious Apple
    3 Tbsp (or about) dill pickle relish
    3 Tbsp (or about) Canola Mayonnaise, Spectrum
    2 Tbsp. parsley, minced

Tips

Serve with mixed salad greens, tomato, and avocado, or as a sandwich filling. We top with VERY SMALL amount of cilantro-jalepeno pesto, which adds PLENTY of flavor/ fire!

Cook chicken breasts (bake, saute' or boil); cool slightly then chop coarsely..
Dice all vegetables - or chop coarsely if larger chunks are preferred. chicken, minced parsley, and mayonnaise (may use more or less to taste).
