Number of Servings: 12

Ingredients

3-inch piece of whole-grain baguette, sliced into 12 1/4-inch slices
6 anchovies, rinsed and patted dry
2 ounces Gouda cheese, thinly sliced
12 green grapes, sliced in half

Tips

Use white anchovies if you can find them. They're milder.
No Gouda? Swap in your favorite creamy white cheese.

Directions

Preheat the oven to 375 degrees. Place the bread in a baking dish lined with parchment paper or a silicone baking mat.

Chop the anchovies until they form a thick paste.
Spread the anchovy paste on each slice of toast, top with cheese and two grape halves.
Bake for 5 minutes, then serve warm.

Serve warm.

Serving Size: Makes 12 servings, one crostini per serving.

I hope it's ok to give a different opinion?

I like the idea of the anchovie 'tapenade' but I would not use gouda. I'd rather use some beautiful red radiccio with the green grapes for that delicious mix of sweet and salty.

If I did use cheese I would choose a sharper sheep or goat variety. - 6/5/12

This sounds delicious, I'm excited to try, but I'm curious: is it really that low in calories?? (Sorry for my ignorance, I'm a bit new to the counting calories/healthy eating and cooking scene!) - 10/16/12

Does anyone know if goat or sheep's cheese would work in place of the Gouda? I'm allergic to cow's milk. - 6/2/12
