Chili, White Chicken Chili, Carol's

Ingredients

    1½ cup chopped onion
    1 cup green sweet pepper, chopped
    1 cup celery, chopped
    2 fresh jalapeno chile peppers, chopped (remove seeds for milder flavor)
    3 cloves garlic, minced
    3 boneless skinless chicken breasts, chopped into ½ - ¾" pieces
    3 15 - 15½ ounce cans Great Northern or cannellini (white kidney) beans
    1 tablespoon ground cumin
    1 teaspoon dried oregano, crushed
    4 cups chicken broth

Directions

1. Spray bottom of a 4-quart pan with cooking spray. Add onions, green pepper, celery and jalapenos. Cook for 5 minutes on medium heat, until onions are soft. 2. Add garlic and continue to cook another 5 minutes.
3. Add the chicken pieces and cook 10 minutes, until chicken is done.
4. Add the beans, cumin, oregano and chicken broth. Stir well, reduce heat to medium-low, and simmer for an hour.

Serve with low-fat sour cream and finely sliced green onions (or shredded Monterey Jack cheese and tortilla strips)
