Paleo Brazilian Curry Chicken

Ingredients

    1.5-2lbs chicken breasts and thighs
    3/4 cup cashews-soaked for 1 hour in enough water to cover them and then ground up with 1/2 of the reserved water.
    2 tbl tomatoe paste
    3 garlic cloves, minced
    1 tsp ginger
    6 tbl curry
    2 red bell peppers chopped
    1 large onion sliced thin
    1 cup unsalted chicken broth
    salt and pepper to taste.

Tips

can you 3/4 cup cocnut milk instead of almond mixture.


Directions

in crock pot, whisk cashew mixture, tomatoe paste, ginger, curry, salt and pepper. Add peppers, onions, chicken and broth. Mix togeather to make sure it coats chicken. Cover and cook low for 8 hours
