Paleo Egg Muffin

Introduction

grab 2, nuke and go grab 2, nuke and go
Number of Servings: 6

Ingredients

    10 eggs, beaten
    1 bunch of asparagus, broken into little bitesize pieces
    1 container mushroom slices
    1/2 purple onion chopped
    4 trader joes chicken hot dogs, diced

Directions

beat eggs.
cook asparagas, mushrooms, onions and hot dog in 1 tbl of olive oil. Let cool. Preheat oven to 350. Mix cooled cooked items with the eggs. Fill 12 count muffin tin that has been sprayed with olive oil spray. Bake for 25-35 minutes or until done.
