Ingredients

    3 Bell peppers (Red, orange, yellow)
    2 cups zucchini, sliced
    3cups summer squash, sliced
    1 tbsp Extra virgin olive oil
    1 tsp-1 tbsp Garlic powder (or paste)
    1tsp-tbsp Onion powder
    1tsp red pepper flakes

Directions

Roast uncovered on a baking sheet at 350 degrees for 45 mins - 1hr. or until peppers a browning on the edges
