Pumpkin Spice Muffins

Introduction

Number of Servings: 12

Ingredients

    1 1/4 cup white flour
    1/2 cup whole wheat flour
    1/2 tsp salt
    2 tsp baking powder
    1 tsp baking soda
    2 tsp pumpkin pie spice

    1 cup cooked mashed pumpkin (I used frozen-defrosted)
    1/2 cup plain nonfat yogurt (greek is ok if you want to use it)
    1/2 cup maple syrup or honey
    1/4 cup melted butter
    1 egg
    1/2 cup chopped walnuts

Directions

Mix the dry ingredients together and set aside.
Mix the pumpkin, yogurt, maple syrup, egg and melted butter. Bled together well, and add to dry ingredients along with the nuts. Mix just til incorporated. Spray muffin tins with non stick spray. Bake muffins at 375 degrees for 20 minutes. Remove...and have one right away!

Serving Size: Makes 12 large size muffins-serving 1 muffin
