Lighter Chinese Lemon Chicken Takeout At Home

Ingredients

    1 large cleaned chicken breast
    Roughly 1 1/5 cups broccoli tops, fresh or thawed frozen
    1 cup dry white rice.

    Spices
    1 tsp ground ginger
    Juice of two lemons
    1 tbsp onion flake or raw onion
    1 tsp turmeric
    1 tsp hot red pepper flakes
    1 tbsp light soy sauce

    1/4 cup water
    1/4 cup sugar
    1 teaspoon cornstarch
    non-stick oil spray (or light oil)

Tips

Don't burn the rice!

This dish is very light tasting, it unfortunately doesn't work well with brown rice!


Directions

Slice chicken up and sprinkle soy sauce on it. Rub in and set aside.
Prepare rice as to rice instructions. My bag says 1 cup of dry rice to 2 cups water, simmer.

As that simmers you shall prepare the sauce and heat your chicken pan.

Mix water, sugar, and everything but the cornstarch in a bowl. Mix well, set aside. Tip chicken strips into hot oiled pan, fry on med-high heat till cooked. Add sauce (hold back about a teaspoon to whisk into the starch) and broccoli.

Whisk the starch into the bit of sauce and stir well into the rest of the dish. When it has thickened up a bit remove from heat and serve over the white rice.

Serving Size: Makes two servings.
