Lemon chicken

Number of Servings: 4

Ingredients

    1 lb chicken
    lemon juice fro 2 lemons
    1/4 c flour
    salt & pepper
    2 tb canola oil
    1/4 c light butter
    1/2 c white wine
    1 c chicken broth

Directions

heat oil and butter in skillet. Dredge chicken through flour. Brown chicken on both sides. Remove from pan and keep warm.
Add wine and chicken broth to skillet and scrape up bits on bottom of pan. Heat until reduced and syrupy. Add lemon juice and return chicken to pan. Heat for 5 min and serve.
