Classic Italian Rice Salad

Introduction

While traveling I stumbled upon some fabulous cold dishes, this is one is from Italy and a great addition to our table on a hot summer night.

NOTES:

I used vegan hot dogs because that's what was handy, but you can use any type of dog you like.

You can use any type of rice you wish, e.g. Basmati with wild rice would make a nice substitute. I also made it with barley and imagine any other grain would work, e.g. quinoa, farro (spelt).

Ingredients

    10.5 oz dry long grain rice, cooked according to bag directions (approx 6 cups cooked)
    15 cornichons pickles (approx 3 oz), sliced
    2 Tbsp chives, chopped
    1 6-oz can of chunk light tuna, drained
    3 Lifelite Smart dogs, quartered and cubed
    2 oz cooked peas
    2 oz kalamata black olives, drained and sliced
    3 oz gruyere or emmental, cubed
    1 yellow or orange bell pepper, seeded and chopped
    1 medium tomato, seeded and chopped
    1 Tbsp olive oil

    salt and pepper to taste (not included)

Tips

This dish offers a lot of flexibility; be creative. The sky is the limit.


Directions

Cook the rice while preparing all the other ingredients or use microwavable precooked frozen rice to expedite things. When the rice is cooled down (I rinse it under cool water to speed the process up), mix all the ingredients in a large bowl. Cover the bowl and store in the refrigerator for at least one hour before serving.
