Sam's Favorite Cornbread

Introduction

A cast-iron skillet is a favorite ;pan for making cornbread because the cast iron is an excellent conductor of heat. That's what gives the cornbread its wonderful crisp, golden crust. Number of Servings: 12

Ingredients

    1 cup all-purpose flour
    3/4 cup cornmeal
    1 Tbsp. baking powder
    3/4 tsp. salt
    2 beaten eggs
    1 cup milk
    1/4 cup cooking oil

Tips

Some like it sweeter, with 2 Tbsp sugar.


Directions

Prheat oven to 400 degrees. In a med. mixing bowl stir together the flour, cornmeal,sugar, baking powder, and salt. In another bowl. combine eggs, milk, and melted shortening or cooking oil. Add the egg mixture all at once to the dry ingredients. Stir just until moistened.

If using a cast-iron skillet, place greased 10-inch skillet in oven for 3 minutes. Remove from oven. Pour batter into hot-skillet and place in the oven.

Serving Size: 8 to 10 pieces
