Baked Sweet Potatoes

Introduction

Simple and quick. Sweet potatoes are very filling and nutritious. Simple and quick. Sweet potatoes are very filling and nutritious.
Number of Servings: 6

Ingredients

    3 cups, cubed sweet potatoes
    1tsp. brown sugar, unpacked (optional)
    1tsp. butter (optional)

Tips

Omit sugar or substitute Splenda for sugar to save a few calories. Butter can be omitted as well. Spices like cinnamon, nutmeg, cloves, or mace would be great with this.


Directions

Wash and peel sweet potatoes. Cut into 1/2 to 1-in cubes. Spread on a cookie sheet lined with parchment or sprayed with cooking spray. Bake at 350 until fork tender, approx 30 minutes, depending on the size of the cubes. Place hot sweet potatoes into a storage container and add 1tsp brown sugar and 1tsp butter. Mix thoroughly.
