2/3 cups boiling water
2 tbsp. butter OR margarine, melted (Smart Balance)
2 cups Pepperidge FarmÂ® Herb Seasoned Stuffing (I use Stove Top)
3 skinless, boneless chicken breast (halves)
1 can (10 3/4 oz.) Campbell'sÂ® Condensed Cream of Mushroom Soup OR Campbell'sÂ® Condensed 98% Fat Free Cream of Mushroom Soup (I use cream of Chicken)
1/3 cup skim milk
1 tbsp. chopped fresh parsley OR 1 tsp. dried parsley flakes
1 cup frozen mixed vegetables
SPOON stuffing along center of shallow baking dish. Arrange chicken on each side of stuffing and sprinkle with paprika.
ADD frozen mixed vegetables around chicken
MIX soup, milk and parsley. Pour over chicken. Cover.
BAKE at 400Â°F. for 30 min. or until done.
