1 eggplant, 1/2 cup of tomato paste (may use less depending on how many slices you get out of the eggplant), turkey pepperoni, shredded cheese, oil/pam spray
Cut ends off of eggplant and trim off skin. Cut into 1/2 inch circles. Brush/spray oil on both sides of each piece. Bake at 425 for about 10 min, flipping sides half way through. Spread tomato paste, cheese and turkey pepperoni on slices. Bake another 5 min until cheese melts.
