1 pound top round beef
2 tablespoons soy sauce, divided
2 tablespoons dry sherry, divided (optional)
2 tablespoons cooking oil
16 snow pea pods
1/2 cup chicken broth
1 tablespoon cornstarch
2 tablespoons cold water
Freeze meat partially for easier slicing
Combine half the soy sauce and half the sherry in small bowl. Substitute extra soy sauce for sherry, if desired. Add beef and marinate for 30 minutes.
Heat oil in wok or skillet. Stir-fry snow peas 1-2 minutes. Set aside.
Stir-fry beef 3-4 minutes. Add snow peas, chicken broth, remaining soy sauce and remaining sherry and heat through, stirring constantly.
Dissolve cornstarch in water. Add to mixture and heat until sauce thickens and is clear.
Serve over rice
