Carol's Chinese Chicken Salad

My take on the popular restaurant/deli meal - easy and much lower in calories. My take on the popular restaurant/deli meal - easy and much lower in calories.
Number of Servings: 10

Ingredients

    2 chicken breats
    1 16 oz bag cole slaw mix
    4 scallions - thinly sliced
    3 TBSP dried parsley
    1/2 c fresh bean sprouts
    2 oz fresh snow peas
    1/2 bottle (6.5 oz) Soy Vay Toasted Sesame Dressing
    Toasted sesame seeds

Tips

The Soy Vay dressing is available at many groceries in the Asian section.

Recipe is open to additions/subtractions in vegetables used: broccoli florets, sliced canned water chestnuts, chopped green or red pepper - anything fresh you have in your fridge!


Directions

Grill chicken breasts (seasoned with salt-free mixture) - set aside to cool.

In a large bowl, combine cole slaw mix, scallions, snow peas, parsley, bean sprouts and salad dressing. Toss well, cover, and refrigerate for 3 hours.

Slice chicken breasts thin. Add to veggie mixture and toss. Sprinkle with toasted sesame seeds and serve.
