Ingredients

    2 cup 1% milkfat cottage cheese
    1/3 c. grated parmesan cheese
    1 egg
    salt
    pepper
    2 cups pasta sauce
    1 cup grated part-skim mozzarella
    1 pound 93% lean hamburger
    1/2 c. chopped onion
    1/2 c. sliced mushrooms
    1 box Hodgson Mill Whole Wheat Lasagna

Directions

mix together the cottage cheese, 1/2 c. of the mozzarella, 1/2 of the parmesan cheese, the egg, salt and pepper together in a bowl. Set aside. Brown the ground beef with the onion and mushrooms. Add the pasta sauce to the meat mixture. Cook the lasagna noodles according to package directions. In a 9 by 13 pan, spoon some of the sauce mixture on the bottom, and then layer some of the noodles on top of it. Next, spoon the cheese mixture, followed by some more of the meat and sauce mixture, followed by noodles again. Repeat until the noodles are used up. On top of the final layer, spread remaining pasta and meat sauce, and then sprinkle with remaining half-cup of mozzarella cheese and remaining parmesan. Bake at 375 degrees for 45 minutes. Let stand for 5 minutes before serving. Makes 9 servings. Serve with a nice salad.
