Honey Lemon Almond Shortbread Cookies

Introduction

Made with no refined sweeteners and whole wheat pastry flour! The key is to using high quality butter! I usually use Kerrygold but used 365 Organic Sweet Cream this time! Ingredients

    *Organic Valley, Unsalted Sweet Cream Butter, 32 tbsp(remove)
    *Bob's Red Mill Whole Wheat Pastry Flour, 5 cup(remove)
    *Almonds, Kirkland Brand Dry Roasted w/sea salt, 1.5 cup(remove)
    *Lemon Zest (Shredded Lemon Peel), 3 tsp(remove)
    *Kirkland Pure Vanilla Extract, 2 tsp(remove)
    *365 amber honey, 16 tbsp(remove)

Directions

1.) Beat butter, honey, and vanilla until light and fluffy.
2.) Mix in lemon zest.
3.) Add flour, one cup at a time until incorporated.
4.) Fold in ground almonds.
5.) Bake at 325 for 18 minutes. Do NOT overbake, should not brown.

Serving Size: Makes 36 large cut out cookies or 48 bars
