Introduction

This is a variation of theone of the Fruit & Yogurt Muffin recipes I found on Sparkpeople.com. I added Whey Protein Powder, ground flax seed meal, I also used Greek Yogurt, egg whites & I only used 1/4 brown sugar. Number of Servings: 12

Ingredients

    2 Cups - Whole Wheat Flour
    1/4 cup - Brown Sugar
    1 tsp of both Baking Powder & Baking Soda
    1 tsp Vanilla Extract
    6 oz container - Greek Yogurt - Plain
    1 large - Egg White (3 tbsp of Liquid Egg Whites)
    4 Tbsp - Light Butter
    1 tbsp - Flax Seed Meal
    1/2 scoop - Designer Whey Vanilla

Directions

Mix Dry Ingredients
Mix Wet Ingredients
Mix Wet & Dry Ingredients (will be thick)
Fold In Fruit
Fill Muffin Tins 2/3 full
bake @ 350 degrees F for 25 minutes

Serving Size: Makes 12 regular size Muffins
