Mom's Best Lasagna

Introduction

Number of Servings: 18

Ingredients

    2 29 ounce cans tomato sauce
    1 pound ground beef
    1/2 diced onion
    1 box lasagna noodles
    48 ounce container fat free cottage cheese
    32 ounces low fat mozzarella cheese
    4 eggs
    1/4 cup parmesean cheese
    Garlic
    Italian seasoning
    2 bay leaves

Directions

Saute ground beef. Once browned, add garlic and diced onion, cooking until onion is translucent.

Pour tomato sauce in crock pot. Add ground beef, italian seasoning and crushed bay leaf. Cook on low heat for about three hours.

Cook lasagna noodles. While noodles are cooking, mix together cheeses and eggs.

Spread layer of meat sauce in bottom of 13x9 pan. Add layer of noodles. Spread cheese mixture across noodles. Layer noodles on top of cheese mixture. Continue layering alternating meat sauce and cheese mixture until pan is full.

Bake in 425 degree oven for 30-45 minutes until hot in center .

Allow to cool before cutting into 18 slices.

Serve with crusty wheat rolls and garden salad.


Using whole wheat noodles will raise the fiber content. If you have a recipe for spaghetti sauce using canned tomatoes rather than the sauce, that can be substituted as well. You can also lower the fat content by using ground turkey or fat free mozzarella, but my family doesn't care for these substitutions, so I left the recipe as is.
