1lb Ground Turkey
1 Can Black Beans, drained and rinsed (2 Cups)
1 Red Pepper, Chopped
1 Cup Salsa
16 Whole Wheat Tortillas 7" 100 Cals ea
2 Tbsp Chili power
1 tsp Cumin
1 tsp Cayenne
1 Cup Shredded Cheese
1 Cup Light Sour Cream
Arugula or other lettuce to taste
If you want to enjoy one large burrito instead of two small ones, use a large 160 calorie tortilla, and double the size of remaining ingredients (ie 1/2 Cup mixture, 20 grams of cheese etc. Take away 40 calories from final count.
Add lettuce and 2TBsp cheese each.
Add 1/4 Cup of mixture to Tortilla. Top with a generous amount of lettuce; 1 Tbsp (10 gr) shredded cheese; 1 Tbsp of Sour Cream. Wrap and serve.
