Introduction

Number of Servings: 9

Ingredients

    3 c grated carrot
    3 c grated sweet potato(can use white potato)
    3/4 c chopped onion
    1 and1/2 tsp minced garlic
    3/4 c whole wheat flour ( for passover can use matza meal)
    3/4 tsp fresh ground pepper or to taste
    3/4 c liquid egg whites
    cooking spray

Directions

Preheat oven to 350. Spray a baking pan with cooking spray. Mix all the ingredients thoroughly and pour into
pan. Bake at 350 for 50 minutes or until lightly browned and bubbling. Cut into 9 equal pieces. For pancakes spray fry pan with cooking spray, add 1/4 cup mixture for each pancake, spray top of pancake with cooking spray before turning over.
