This is a tweaked, practically fat-free version of LIBBY'S pumpkin cranberry bread. If you want, you can fold in 1 c. unsweetened cranberries at the end.My egg count is a little weird because a) we only have jumbo eggs & b) I used 2 yolks so that I could save the whites to eat. Ingredients

Gold Medal Unbleached All Purpose Flour, 3 cup
Pumpkin Pie spice, 1 tbsp + 2 tsp
Baking Soda, 2 tsp
Salt, 1.5 tsp
Granulated Sugar, 1.5 cup
Pumpkin, canned, without salt, 15 oz can = 425 grams
Egg, fresh, 1 jumbo
Egg Yolk, 2 jumbo
Applesauce, unsweetened, 1 cup
Orange Juice, 1/2 cup
Tips
If you keep track of Calcium and Vit. D, the count of those nutrients in this recipe in affected by the fact that I use orange juice fortified with them.
I also use unsweetened applesauce because 1) it's less sugar & 2) fruit is sweet enough!
No pumpkin pie spice? No problem!
1 Tbsp pumpkin pie spice = 1.5 tsp cinnamon + 3/4 tsp ginger + 3/4 tsp allspice + 3/8 tsp nutmeg
1 tsp pumpkin pie spice = 1/2 tsp cinnamon + 1/4 tsp ginger + 1/4 tsp allspice + 1/8 tsp nutmeg
Directions
* If you would like to try the original, use 3 cups sugar instead of 1.5, 4 large eggs instead of 3-ish jumbo, and 1 cup vegetable oil instead of applesauce. It's delicious, but has more fat and sugar *
