IntroductionReally easy Breakfast or lunch Quiche
Bake in a 9 inchpie plate or in 2 separate baking dishes. I do that and we can have it later in the week too. Really easy Breakfast or lunch Quiche
Bake in a 9 inchpie plate or in 2 separate baking dishes. I do that and we can have it later in the week too.
1 tbsp Canola Oil.
1 cup, chopped Onions, raw.
1 package (10 oz)Spinach, frozen.
1 large Egg.
3/4 cup Liquid Egg Whites.
1 cup Cheese, Kraft Mexican Style Taco Cheese,
Parmesan Cheese, grated, 0.25 cup
Pepper, black, 0.25 tsp
Microwave 50% power for reheat. Cover with paper towel or lid. I use 4 minutes for this,
VARIATION NOT TRACKED.BROCCOLI is a nice Variation. Substitute in tracking.
Chopped Ham, Bacon, Red peppers(cooked with onions also chopped and microwaved)
(or bake 2 small casserole dishes so 1 can be used later 4 servings each casserole)
1.Cook Onions is oil in skillet OR
In a covered microwave container, pre-cook chopped onions in oil at 100% power for 6 minutes.
Transfer onions to large skillet over medium high heat.
2.Add thawed, squeezed Spinach, cook till moisture evaporates completely.(important to be dry)
3.In a large bowl combine Eggs, Egg whites, Cheese, Parmesan cheese and Ground Pepper to taste if desired.
4.Add Spinach mixture and stir till blended.
5.Add Spinach -Egg mixture to pie plate or smaller casserole dishes.
6.Place on middle shelf of 350 Degree oven.
7.Cook for 30 minutes till center is firm.
Allow to stand 10 minutes, before cutting. Serves 8
