Stuffed Peppers

Introduction

Lower-carb version of my stuffed peppers. Lower-carb version of my stuffed peppers.
Number of Servings: 2

Ingredients

    1 or 2 (recipe for 1 is calculated) medium bell peppers, seeded and hollowed
    12 oz ground beef
    1/2 small onion, diced
    1 tsp garlic powder
    1 tsp ground pepper
    1/2 c no salt added diced tomatoes and some juice


Directions

Mix meat and onion and spices together in bowl. Split in half and shove meat inside of the peppers. Top with 1/2 of the tomatoes per pepper (.25 c) each. drizzle juice.

Bake at 350* for 1 hour and 15 min. (or until pepper is soft to fork poke).

Serving Size: 2 large servings. (1 pepper each)
