Ingredients

    1/4 cup chopped onion
    1-2 garlic cloves, roughly chopped
2 serrano or other small chili pepper (less for milder chili), chopped with seeds and ribs
1 lg yellow bell pepper finely diced
    non-stick cooking spray
1 can diced tomatoes, with juice
    1 lb lean ground turkey
    1 can navy beans, drained
    1 tbsp garlic powder
1 tsp kosher or sea salt
    2 tsp paprika
1-15 oz can 99% Fat Free chicken broth
    2 bay leaves
    1-2 tsp tomato paste
1/4 cup good quality, dry red wine

Directions

Makes 6 1/2-cup servings

Spray large stock pot with cooking spray. Over medium high heat add in onion, garlic, yellow pepper and chili peppers. Saute for 1-2 minutes, stirring frequently until onions and peppers soften. Keep an eye on this to prevent burning.

Break apart ground turkey breast and add to pot. Cook until turkey begins to brown throughout. Add in paprika, chili powder, garlic powder, and salt. Stir to mix. Stir in canned, diced tomato and cook for 1 minute. Add chicken broth, tomato paste and bay leaves, again stirring to incorporate. Stir in drained navy beans.

Allow mixture to come to a boil. Reduce heat to med-low and cover. Simmer until nearly all fluids have evaporated, stirring occasionally. Add red wine. Cook another 10-15 minutes. Remove bay leaves.

Serve with saltine crackers.
