Low-Sodium Chicken Soup

Introduction

My traditional base for matzo ball soup! My traditional base for matzo ball soup!
Number of Servings: 6

Ingredients

    8 cups low-sodium chicken broth
    2 cups of water
    1/2 of a cooked rotisserie chicken (one breast, one thigh, one wing, one drumstick)
    6 carrots, peeled and chopped
    1/2 onion, finely minced
    5 celery stalks, finely minced
    handful of parsley, chopped

Tips

Perfect for Passover! You can also add noodles or rice when it is not Passover!


Directions

Combine all ingredients except chicken and water in a large pot over medium-high heat. In the meantime, chop or shred the chicken into bite-sized pieces. Once the contents of the pot are boiling, add the chicken. Reduce the heat to medium-low and let cook until the carrots are tender (approximately 15-20 minutes).

If the soup has reduced too much, add some or all of the water (as much as you desire) and let it return to a boil.

Serve hot with bread or a salad... or, my favorite: matzo balls!
