Ingredients

    1 Large Butternut Squash, peeled and cubed
    1 Onion, chopped
    1 Russet Potatoe, chopped
    4 C Chicken Broth
    2 C Water
    2 tsp Cumin
    2TBS Sherry Vinegar

Directions

Slowly saute diced onion on soup pot until translucent and soft. Add the squash, potato, broth, water, cumin & vinegar. Bring to a boil & simmer until the squash & potato are soft. Blend in the pot using a stick blender until smooth and creamy.
