Preheat the oven to 350*F. In a large bowl, mix together the eggs, crushed corn flakes, salsa, salad dressing, chili powder, and cumin. Add chicken and mix gently but thoroughly. Shape into loaf on slotted baking pan or broiler pan. Bake at 350*F for one hour, until internal temperature registers 175*F. Cover with foil and let stand for ten minutes. Slice and serve with sour cream and more salsa.
great recipe... made this last night, and my friends who turned up when it was finished loved it. keeper, but I added some extra spices, like garlic, and red pepper I think next time I will add some cheese
We had it for dinner and it was AWESOME! Added a little extra salsa on top while baking (the "ketchup" on a regular loaf), and substituted ground turkey for the chicken. Excellent! Can't wait to have again.
We ate this for dinner not breakfast. We loved it and have made it a couple of time. I buy the corn flake crumbs to make it a lil quicker. You just have to use less crumbs then says in recipe. Goes great with a baked potato
It is an "ok" meal. The protein is not "high" but normal, low dietary fiber, and higher in carbs then I would like, but it is low in fat which is a plus. I liked someones change of adding fiberone instead of cornflakes.
Thanks.... I've been craving turkey and forgot I had some ground turkey in freezer! I will serve it with some homemade cranberry sauce from SP Thanksgiving recipes, and a butterhead lettuce salad with avocado, turnip or jicama slices, and canned mandarin oranges... maybe a cucumber too.
