Lamb and Peas Casserole

Introduction

This is a great way to use up left over lamb roast. Our family enjoyed this meal after the Seder Meal. This is a great way to use up left over lamb roast. Our family enjoyed this meal after the Seder Meal.
Number of Servings: 8

Ingredients

    2 cups Lamb roast cut into bite sized pieces
    1/4 cup Sweet and Spicy Barbecue sauce
    10 oz. pkg whole wheat penne
    1/2 cup frozen peas
    1 cup plain croutons
    1 cup shredded cheddar or colby cheese, low fat

Directions

Take cut up lamb and put in sauce pan with barbecue sauce and heat while stirring. While meat is heating cook pasta according to pakage directions. When meat is warm and the pasta is done mix into a 9X13 casserole dish with frozen peas. Spread croutons then cheese on top. Bake uncovered at 350 degrees for 20 min.
