Banana Oatmeal Muffins

Introduction

Number of Servings: 24

Ingredients

    2 cups bananas, mashed
    8 Tbsp vegetable (canola) oil
    4 large (1 c) eggs

    4 tsp baking powder
    1 tsp baking soda
    1.5 cups all purpose flour (or whole wheat combination)
    2 cups quick cooking rolled oats (can grind in food processor to make flour-like, if desired)
    4 Tbsp flax seeds
    2/3 cup Splenda Brown Mixture for baking

Tips

- replace portion of eggs with egg whites
- replace portion (or all) of oil with apple sauce (which may reduce amount of sweetener as well
- Freezes well - just defrost or reheat in microwave, if desired


Directions

Combine wet and dry ingredients separately.
Mix together just until combined

Spoon into 24 muffin tins (lined with paper or silicone liners for ease of removal).

Bake at 350F for 20 minutes, or until golden brown and toothpick inserted in centre comes out clean.

Serving Size: Makes 24 regular sized muffins
