Lisa’s Quinoa and Chicken Salad

Introduction

Ingredients

    boneless, skinless chicken breasts cut into small strips
    1 onion
    3 clove garlic
    1 tbsp olive oil
    Green, yellow and red peppers, chopped
    1/2 Red onion, chopped
    1 cup chopped scallions
    1 cucumber, peeled and diced
    3 to 4 stalks chopped celery
    1 jalapeño, seeded (or not, for more spice) and diced small
    3 cups fresh spinach
    juice of 1 lemon
    1 tbsp olive oil
    fresh mint leaves
    fresh oregano
    pinch of sugar
    salt and pepper to taste

Tips

Serve with favorite thai hot sauce on top, if desired


Directions

Cook chicken with onions and garlic and olive oil. Cook quinoa according to package directions. Chop all vegetables - add all veggies, chicken, and Quinoa together in a bowl while quinoa is still hot. Toss with lemon juice mixed with a tbsp of olive oil and a pinch of sugar, salt, pepper, fresh mint leaves and fresh oregano. Serve immediately.

Serving Size: Makes 8 1 1/2 cup servings or more
