Banana/Apple/Cherry muffins

Introduction

Hearty, thick muffins made with oatmeal and whole wheat flour, loaded with fruit! Hearty, thick muffins made with oatmeal and whole wheat flour, loaded with fruit!
Number of Servings: 18

Ingredients

    2 tbsp butter
    3/4 cup brown sugar
    6 to 8 very ripe bananas
    2 eggs, beaten
    1 tbsp vanilla extract
    two apples, peeled and diced
    1/3 cup dried cherries
    1.5 cup whole wheat flour
    1.5 cup oatmeal, dry
    1/2 tsp baking soda
    1 tsp baking powder
    1 tbsp cinnamon
    1 tbsp nutmeg
    juice from one lemon

Directions

cream butter and sugar
add bananas
add vanilla and lemon juice
add eggs
add flour, oatmeal, baking soda and powder, cinnamon, nutmeg
fold in apples and dried cherries
spoon into prepared muffin tins
Bake for 25 to 30 minutes - until toothpick inserted comes out clean


Serving Size: makes 18 to 20 hearty muffins
