Banana Muffins (Elena Amsterdam)

Number of Servings: 12

Ingredients

    Almond flour - blanched (Honeyville Grain), 3 cup
    Salt, .25 tsp
    Baking Soda, 1.5 tsp
    Coconut Oil, 2 tbsp (or butter oil)
    Egg, fresh, 3 large
    Banana, fresh, 2 cup, mashed

Directions

Preheat oven to 350. Line 12 muffin cups with papers.

Combine almond flour, salt, and baking soda. Whisk together butter and eggs. Stir wet ingredients into dry and combine well. Stir bananas into the batter. Spoon into muffin cups.

Bake for 30-35 minutes, until golden brown and toothpick comes out clean. Let muffins cool in pan for 30 minutes, then serve.

Serving Size: Makes 12 muffins
