4 Boneless, Skinless Chicken Breasts
1 Med. onion, thinly sliced
1/2 cup of orange juice or 1/4 c of concentrate
1tsp poultry seasoning
1/2 tsp. salt
1 can of mandarin oranges, drained, with 3 tbsp. of juice reserved
2 tbsp. flour
*combine onion, orange juice, poultry seasoning, and salt. pour over chicken.
*Cover. Cook on low 4-5 hours
*Remove chicken and keep warm. Reserve cooking juices.
*In a saucepan, combine 3 tbsp. reserved mandarin orange juice and flour. Stir until smooth.
*Stir in chicken cooking juices. Bring to a boil. Stir and cook for 2 mins to thicken.
*Stir in mandarin oranges. Pour over chicken.
Serve with rice or pasta
