Frittata, veg, cheese and rice

Ingredients

    1 c. -cooked brown rice
    1/4 c -onion
    1/4 c - red pepper
    2- fresh mushrooms, chopped or sliced
    2 - large eggs
    9 tbsp - liquid egg whites
    1/8 c - shredded cheese 2%
    1 slice - 2% cheese
    1 tsp olive oil

Directions

saute vegetables in oven proof pan and olive oil
add cooked rice and mix
beat whole eggs and liquid whites together and add to pan
cook egg as if making an omelete, leaving runny in the middle
move pan into oven under broiler until egg is set.
Sprinkle with cheese and return to broiler until cheese is melted.
