1 large acorn squash
4 tbsp. diced dried apricots
2 tbsp. chopped raw cashews
1 15 oz can of crushed pineapple, juice reserved
2 tbsp. raisins
cinnamon to taste
cover apricots in bowl with some pineapple juice. add the cashews, pineapple and raisins and soak.
when squash in done put mixture in each half and top with cinnamon and cover with aluminum foil and bake for another 30 minutes
